Lassi and Date Milk Shake
Why Lassi?
Lassi (pronounced "LAH-see") is simply fresh yogurt blended with room temperature water. Whereas yogurt by itself can clog the channels of the
digestive and elimination systems, once it is transformed into lassi it actually aids digestion. Thinning yogurt with water and blending it changes
the molecular structure so it is more easily assimilated. Drink it before or with lunch.
Sweet Lassi:
Blend to taste:
* 1 part cold yogurt
* 3 parts water
* Pinches of cardamon, sugar and rosewater
Digestive Lassi:
Blend to taste:
* 1 part cold yogurt
* 3 parts water
* Pinches of ginger, cumin, salt and black pepper
Date Milk Shake
Ingredients
* 4-5 whole dates (Medjool varitey or similar is best)
* 1 cup whole organic milk (preferably not homogenized)
* 2 pinches cinnamon powder
Instructions
* Boil milk until it foams once.
* Turn off heat:
* Put milk, cinnamon and dates in automatic blender.
* Blend until dates are ground fine.
* Serve warm in winter, room temperature or slightly cool (not cold) in summer or if a strong Pitta imbalance exists.

Apple Pancakes
Makes 16 3-inch pancakes
These pancakes are made with a crepe batter which is softer and more moist than regular pancake batter. They are also sweeter because of the apples so
they don't require any topping and can be eaten by themselves.
* 1 1/2 cups unbleached white flour
* 1/2 teaspoon salt
* 2 tablespoons arrowroot
* 2 tablespoons Almond Energy Drink Mix
* 1/8 teaspoon ground cinnamon
* 2 tablespoons melted Ghee
* 1 1/2 cups plain soymilk
* 3 sweet apples
1. In a mixing bowl mix the dry ingredients. Add ghee and soymilk and mix into a smooth, thick batter with a mixer or a whisk.
2. Peel and core apples and grate on a medium size grater. Stir grated apples into the batter.
3. Place a skillet on medium heat. Lightly coat with ghee. Pour 1/3 cup of batter onto the skillet. Pour 3 or 4 pancakes at a time, depending on
the size of your skillet. When the side of the pancakes start to turn hard, flip them over with a spatula. Cook both sides to a golden brown.

Lauki (Loki)
How to prepare this exotic squash:
This vegetable is excellent for balancing liver function for most people. It is often recommended by ayurvedic physicians when the liver is inflamed
and cannot efficiently process food for maximum nutrition and assimilation.
How to Recognize Lauki:
Lauki is a squash, resembling yellow crook-neck squash in shape but a light green in color, sometimes much larger and thicker. It grows up to 2 feet
long in some areas, and starts anywhere from ten inches in length. It has a smooth surface like eggplant, but not as shiny. The best quality is firm,
light and even in color without many blemishes.
Where to Find Lauki:
Lauki is sold by many names, depending on who is selling it. Ask for Lauki, or Loki, in your local Indian or Asian food store. Ask for Kakunsa where
Italian foods are sold. Ask for Fuzzy Squash in Canada. And you can special order it in many U.S. food stores as White Pumpkin, Benares Pumpkin or
Long White Gourd. These are the names for the sweet variety. Avoid the bitter variety, called Bitter Gourd. The scientific names are Lagenaria
vulgaris or Cucurbita.
How to Prepare Lauki:
Wash and peel. Chop into small cubes, about 1/2". Steam until slightly soft, like yellow squash, usually about 15 minutes. Alternatively, place in
frying pan or wok, with one teaspoon of ghee, and sauté on medium heat until slightly soft and moist. Melt one tablespoon of ghee in a large frying
pan until it turns clear. Mix 1/2 teaspoon whole cumin and 1/2 teaspoon of turmeric into the ghee until the aromas are released. Add the steamed or
cooked lauki and evenly coat it with the ghee-spice mixture. Serve immediately, not too hot.
Tip: Whole grains make a perfect complement. Basmati rice is good for those with a weak or inflamed liver.
